What gets removed

Photos: GPS location, camera serial number, date and time, owner name, hidden preview images. Removed without re-compressing, so the photo itself stays pixel-perfect.
PDFs: Author, the software it was made with, names on comments, and old versions of the file that are often still hiding inside.
Word, Excel, PowerPoint: Author, who saved it last, company name, total editing time, template paths with your username in them, names on comments and tracked changes.
Videos: Where it was filmed, which phone, and when. The video and sound are copied as-is, so no quality is lost.

What stays: the actual content. Text, comments, pictures, colour profiles and the way your photo is rotated. Only the gossip goes.
